  1. Preheat your oven and grease your skillet with coconut oil.
  2. Start by melting and cooling your coconut oil. While you do this, peel, core and dice your apples.
  3. Add the coconut oil, coconut milk, beaten eggs, maple syrup and vanilla to a bowl and whisk vigorously until everything is well combined.
  4. Measure in the whole wheat flour, brown rice flour, baking powder, and cinnamon.
  5. Fold everything gently together until the flour is incorporated.
  6. Lastly, add the chopped apples and mix a few times.
  7. Pour the batter into the skillet and back for 40 minutes or until the edges are brown and pull away from the skillet.
  8. Let this cool and serve it up warm, in thick wedges.
