Chicken Corn Quinoa Casserole {gluten free, dairy free}

  1. Remove corn kernels from their husks.
  2. Boil water and cook quinoa according to package directions.
  3. Cube chicken breast.
  4. Heat a large pan with EVOO; cook chicken until juices run clear.
  5. Remove chicken and set on a separate plate.
  6. Chop onion and pepper.
  7. Heat remaining tbsp. of EVOO in a pan.
  8. Cook onions and peppers for 3-5 mins.
  9. Shred zucchini.
  10. Add zucchini, corn, chilies, garlic and spices into the pan. Cook for 5 mins until soft.
  11. Pour in chicken, beans (with juice), quinoa, and 1/3 cup of almond meal.
  12. Remove pan from heat and pour mixture into a casserole dish sprayed with oil.
  13. Top with remaining almond meal.
  14. Bake for 20-25 mins until the topping is brown and the edges bubble.
