  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
  2. Cream together the coconut sugar and ghee for about 1 minute until fluffy. Add the egg, scrape the sides, and beat until combined.
  3. Add the ground almonds or almond flour, baking powder, baking soda, vanilla and sea salt. Mix well until everything is incorporated.
  4. Fold in the cranberries and white chocolate. Scoop out the cookies using a cookie scoop or tablespoon measuring spoon. Place into the oven for 10-12 minutes or until the cookies are just golden brown.
  5. Cool the cookies on a wire rack and serve!
