Preheat oven to 350 degrees. Pull your pork loin out of the fridge and let it come to room temp. Combine all spices, salt and coconut sugar into a ramekin and mix well.
Trim the fat off of the pork, pat it dry with a paper towel and liberally rub with 2.5 tablespoons of the jerk seasoning. You can save the remaining seasoning for whatever you like. Place the pork onto a cookie sheet lined with a wire rack and roast in the oven for 80-90 minutes. A thermometer should read 145 degrees and there should be no pink in the middle. Let this rest for 10 minutes for serving, slice up and dig in!
