Description

This Winter Fruit Salad combines fruit slices, chopped almonds, and cinnamon infused vinaigrette for an easy, no bake or cook side dish for the cold months and Holidays.


Ingredients

  • 3 apples, diced (I used Macintosh, but you can use what you like)
  • 2 oranges, peeled and diced
  • 1+1/2 cups halved green grapes
  • 1 cup dried cherries
  • 1/4 cup apple cider
  • 1/4 cup olive oil
  • 1 Tbsp. maple syrup
  • 1 Tbsp. white wine vinegar
  • 1/2 tsp. cinnamon
  • 1 pinch sea salt
  • 1/2 cup chopped pecans

Instructions

  1. Add all of the cut fruit and the cherries to a large bowl.
  2. Whisk together the cider, oil, maple syrup, vinegar, cinnamon, and salt together vigorously.
  3. Pour over the fruit and toss.
  4. Transfer to a serving bowl and top with the pecans and serve!

Notes

  • this keeps well covered tightly in the fridge for about 24 hours so you can make it ahead of time
