  1. For the compote:
  2. Peel, core, and slice your apples.
  3. While you’re doing this heat a pan or cast iron skillet over medium.
  4. When the pan is warm, add your butter and let it brown a little for about 2 mins.
  5. Add your apples, the bit of maple syrup, and cinnamon.
  6. Let this cook down for about 10 mins until the apples are very soft, and have created their own cinnamony syrup.
  7. To Make the Parfait:
  8. Layer the Greek yogurt and about 1/4 cup of the compote in a bowl or glass.
  9. Top with granola & enjoy!
