  1. Cook quinoa.
  2. Add oats, pecans, applesauce, maple syrup, melted butter, almond cashew milk, egg, baking powder, salt and cinnamon to a bowl.
  3. Cool quinoa.
  4. Add quinoa to the oat mixture and stir.
  5. Fold in blueberries
  6. Grease skillet with butter or coconut oil
  7. Pour batter into the skillet and top with the peach slices
  8. Bake for 40 minutes or until the middle of the dish looks cooked and the edges have started to brown.
  9. Remove skillet from the oven and let the bake cool slightly and cut into wedges.
  10. Enjoy!
