Life Saver-Sweet Potato & Veggie Hash {gluten free}

  1. Wash potatoes.
  2. Heat a large pan or skillet on medium high.
  3. Peel sweet potatoes and give all potatoes a chop.
  4. Pour oil into your pan.
  5. Add potatoes to the pan and cook for 5 mins.
  6. Add water. Turn burner to medium, cover and cook for 5-8 mins.
  7. Chop vegetables.
  8. Drain water and return pan to heat.
  9. Add vegetables to potato mixture.
  10. Stir, cook for about 10 mins.
  11. Add cumin, salt, and pepper.
  12. Turn burner to high and cook to get a crisp on the hash for 2-3 minutes. Remove from heat.
  13. Heat a small pan, spray with olive oil.
  14. Fry each egg until the white is set and the yolk remains gooey.
  15. Plate 1/4 of the hash on a plate and top with the egg. Enjoy!
