Melt the butter in a large pot over medium heat. Once melted and bubbly, add the onion and saute until translucent.
Then add the garlic and saute for about 2 more minutes before adding the ground meat. Cook until the meat is browned, about 5-7 minutes.
Then, add the tomato paste, Dijon, paprika, thyme, salt and pepper. Cook for 1 minute before adding the tomatoes, potatoes, stock and bay leaf. Stir well and bring the mixture to a slow boil.
Add in the mixed vegetables and cook until the potatoes are tender, about 15-20 minutes.
Serve while hot and feel free to add toppings – green onion, cheddar cheese, sour cream, crushed tortillas, oyster crackers – anything you like!
