Ingredients

For the casserole:

Venison Breakfast Sausage (or use half of this recipe and make the rest into patties):

Instructions

  1. Preheat the oven to 375F.
  2. Start by combining the ingredients to make the venison breakfast sausage. Instead of forming the sausage into logs or patties, add it to a large pan over medium heat with the butter. Cook the sausage until browned and remove from the pan.
  3. Place the pan back over medium heat and add the onion and pepper. Let them saute for about 5-7 minutes until soft. Set aside to let them cool slightly.
  4. Whisk together the eggs, milk, salt and pepper. When cooled, add the onion and pepper to the egg mixture.
  5. To assemble the casserole, grease a 9x13in baking dish with butter. Add the tater tots, cooked venison sausage crumbles and half of the cheese to the bottom of the dish. Toss together.
  6. Pour the egg mixture over everything and slide into the oven.
  7. Bake for 45 minutes, remove the dish to sprinkle on the remaining cheese and cook until set, golden and melty, about 5-10 additional minutes.
  8. Slice, serve and enjoy!
