  1. Begin adding the chopped strawberries to a bowl with the granulated sugar. Set the bowl aside.

  2. Add the whipping cream to a large bowl or the bowl of a standing mixer or a large bowl and use a handheld mixer. Whip until soft peaks form.

  3. Add the powdered sugar and vanilla to the whipped cream and whip until stiff peaks form.

  4. Remove the whipped cream from the bowl and pour into another large bowl so you can whip the softened cream cheese (if you’re using a standing mixer).

  5. Add the softened cream cheese and 2 cups of the chopped strawberries to the bowl of the standing mixer or a separate bowl.

  6. Whip on high speed for about 2-3 minutes until the cream cheese is light and fluffy and the strawberries have broken down.

  7. Gently fold 2/3 of the whipped cream into the strawberry cream cheese mixture until combined.

  8. To assemble the fools, add about 1/3 cup of the strawberry cream to the bottom of a parfait glass or a bowl. Sprinkle on some of the remaining chopped strawberries, blueberries and crushed graham crackers.

  9. Top with another 1/3 cup dollop of the strawberry cream and garnish with the reserved whipped cream and a few berries for serving.
