Mini Baked Apple Pie Oatmeal

Description

These Mini Baked Apple Pie Oatmeals are hearty, healthy and perfectly portioned and you have to try them for breakfast. They have oats, fresh apples, and apple pie spice.

Ingredients

  • 2 ripe bananas, mashed
  • 2 room temperature eggs, beaten
  • 2 Tbsp. melted coconut oil
  • 1/2 cup maple syrup
  • 1 + 1/4 cups almond milk (or milk of choice)
  • 2 + 1/2 cups rolled oats
  • 2 Tbsp. chia seeds
  • 2 Tbsp. ground flax seeds
  • 2 tsp. apple pie spice
  • 1 tsp. baking powder
  • 1 pinch sea salt
  • 2 cups diced apples
  • 8 ramekins or small baking dishes*

Instructions

  1. Preheat the oven to 350F.
  2. Mash the bananas in a bowl.
  3. Beat the eggs and add them to the bowl.
  4. Add the coconut oil, maple syrup, almond milk and vanilla. Whisk together well.
  5. Fold in the oats, chia seeds, flax seeds, apple pie spice, baking powder, sea salt, and diced apples.
  6. Pour the oatmeal evenly between each of the ramekins and pop in the oven.
  7. Bake for 30 minutes or until the oatmeals are set and golden brown.

Notes

  • this can also be baked in a 9×13 inch casserole dish. Bake at the same temperature and check after 25 minutes.
