It’s no secret around here that I struggle with breakfast. Sometimes if I don’t prep, it’s noon and it’s all caffeine no carbs. No Bueno for this girl because I NEED to eat something sustaining to keep me full and moving all day long. I have a hunch that some of you are like me!

Ok, I’m not waiting for your answer. Here it is: Mini Baked Apple Pie Oatmeal. Mhmm, honey. You’re going to need a few ramekins to make this and just a few ingredients, but the best thing is… you bake them at the beginning of the week and pop the already portioned individual servings in the microwave as needed. Or, you can serve them out of the oven to a crowd! This makes 8 servings which is perfect for J and I during the week.
Actually, he won’t eat traditionally prepared oatmeal, but he loves these. So, if you’ve got a texture freak on your hands…just give this a shot for me ‘eh?

Mini Baked Apple Pie Oatmeal
These Mini Baked Apple Pie Oatmeals are hearty, healthy and perfectly portioned and you have to try them for breakfast. They have oats, fresh apples, and apple pie spice.
- Prep Time: 10 minutes
- Cook Time: 30 minutes
- Total Time: 40 minutes
- Yield: 8 1x
Ingredients
- 2 ripe bananas, mashed
- 2 room temperature eggs, beaten
- 2 Tbsp. melted coconut oil
- 1/2 cup maple syrup
- 1 + 1/4 cups almond milk (or milk of choice)
- 1 tsp. vanilla
- 2 + 1/2 cups rolled oats
- 2 Tbsp. chia seeds
- 2 Tbsp. ground flax seeds
- 2 tsp. apple pie spice
- 1 tsp. baking powder
- 1 pinch sea salt
- 2 cups diced apples
- 8 ramekins or small baking dishes*
Instructions
- Preheat the oven to 350F.
- Mash the bananas in a bowl.
- Beat the eggs and add them to the bowl.
- Add the coconut oil, maple syrup, almond milk and vanilla. Whisk together well.
- Fold in the oats, chia seeds, flax seeds, apple pie spice, baking powder, sea salt, and diced apples.
- Pour the oatmeal evenly between each of the ramekins and pop in the oven.
- Bake for 30 minutes or until the oatmeals are set and golden brown.
Notes
- this can also be baked in a 9×13 inch casserole dish. Bake at the same temperature and check after 25 minutes.
