Whole30 Taco Zoodle “Spaghetti”
So, I’m low key obsessed with Ree Drummond of The Pioneer Woman. This one time, J and I went to a bourbon and wine bar (aka our heaven) and had one too many and spent 30 minutes drafting her a heartfelt Instagram message. We never heard back.
Side note: isn’t he the coolest for sitting there & encouraging me to write to her? I tell you, it’s the little things.
Anyway, she’s been doing a ton of weird mashups in the kitchen lately, and I thought I’d hop along on the bandwagon. Two of my favorite things to make are marinara and chili, so why not combine the two and feed you all this awesomeness?

You can totally use traditional, whole wheat or gluten free pasta here, but the zoodles were delicious to me. I made this a thick sauce so it wouldn’t feel too watery. Feel free to dial back or go all in with the jalapenos. You know how I feel about them (hint: LOW KEY OBSESSED).

LET’S GET TO IT!
WHAT YOU’LL NEED (increments below in the printout):
Olive oil
Lean ground beef (or turkey or venison)
Onion
Bell pepper
Jalapeno
Garlic cloves
Chili powder
Cumin
Salt
Pepper
Canned, diced tomatoes (if you’re doing Whole30 check ingredients)
Canned tomato sauce (if you’re doing Whole30 check ingredients)
Canned tomato paste (if you’re doing Whole30 check ingredients)
Zucchini (or pasta of choice)
Optional – nutritional yeast (or cheese if you’re not doing a Whole30)
WHAT YOU’LL DO:
Begin by heating 1 tablespoon of the olive oil in a large skillet or saucepan over medium heat. Add the ground beef.
While the beef browns, dice the onion, bell pepper and jalapeno (be careful with the seeds!), and mince the garlic. After about 5 minutes, add the onion and peppers into the pan and cook for 8-10 minutes, or until the veggies have softened. Add the garlic, chili powder, cumin, 1 teaspoon of the salt, and pepper. Cook for 2 more minutes.
Add the tomato products and bring the mixture to a boil, mixing well. Turn the heat down to low and allow the sauce to simmer.
Meanwhile, spiralize the zucchini. Heat a large skillet over medium-low with the remaining olive oil. Add the zoodles and toss them for 1-2 minutes in the oil, sprinkling on the remaining pinch of salt. Remove from the heat as soon as they soften.
Serve the sauce on top of the zoodles and dig in! Sprinkle on the nutritional yeast if you’d like!
