OK party people, this week is all about Fourth of July treats. IDK about all of you, but I love any excuse to be patriotic, celebrate our amazing country and eat all of the red, white and blue things. What are my favorite red, white and blue things to eat you ask? First thing that comes to my mind is FRUIT.
Today we’ll be hanging out in the kitchen with watermelon (our red), coconut – milk and flakes (our white), and blueberries (our blue).
This is Ashey’s recipe with Cook Nourish Bliss that I’ve altered a smidge, and can I just tell you that it is amazing and she is a genius.
I’m always craving ice cream and milkshakes when the weather gets warm. But this isn’t always the healthiest treat of choice. Often after indulging I feel bloated, weighed down and sugared up.
ENTER COCONUT MILK! The coconut milk gives the shake a SUPER rich texture, and makes this the perfect indulgent treat for a hot day – without the guilt!
This is SO simple to make! Seriously. I cut up my watermelon the night before and froze it; I think the frozen watermelon gives the shake a really great…slush, if you will.
When you’re ready to get your shake on, pull out your blender and remove the watermelon from the freezer. Add the watermelon, coconut milk, maple syrup, vanilla and pinch of salt into your blender.
Blend until smooth.
When I made this the first time I thought “Whoa, that is going to be too much vanilla”. But, I went with it and the results were amazing. So, trust me on the vanilla, you won’t regret it.
Pour this into your glass of choice and top each with a few blueberries and a sprinkle of coconut.
Maybe throw in a wedge of watermelon for fun.

Ingredients
- 3 cups (ish) of frozen watermelon – cut into chunks
- 1 can of full-fat coconut milk
- 1 1/2 tbsp. of pure maple syrup (you can add more if you like a sweeter drink but this was fine for me)
- 1 1/2 tsp. of vanilla
- pinch of salt
- Toppings:
- blueberries
- shredded coconut
Instructions
- Freeze watermelon cubes overnight.
- Remove frozen watermelon from freezer and add to a blender.
- Add coconut milk, maple syrup, vanilla and salt to blender.
- Blend until smooth.
- Pour into a glass and top with desired toppings.
- Sip away!

Oh goodness! This looks perfect! I’ve only had a vanilla milkshake with chunks of watermelon. I’m sure pureeing it all together makes for a delicious treat 🙂
