Charred Citrus and Pomegranate Gin and Tonic

I know. I know. This looks like one of those wildly trendy & complicated cocktails that you order on a rare occasion that you find yourself perched on a bar stool when you’re out in the city at some overpriced hotel bar. I know. Actually, I think I saw charred citrus on a menu last year at one of those overpriced places I love and I’ve been meaning to try something with it ever since.
HOWEVER, although I may say that this looks rather trendy, it is NOT complicated. I repeat – NOT COMPLICATED.
Caps were necessary. All this cocktail contains is gin, tonic, pomegranate seeds, and citrus that has been broiled for some time in the oven. I swear it.
If I do say so myself, it’s incredibly well balanced, and just a tad sweet, beautifully smoky and bright. I use Powell and Mahoney Sparkling Tonic which I love because it uses cane sugar and all natural flavors like lemon, lime, and lemongrass.
This is a wonderful cocktail because you can char the citrus ahead of time, and set all of the ingredients out for guests to create their own cocktails at a party. Vodka works just a well here, but I love a good gin drink. Alrighty…
LET’S GET TO IT!
WHAT YOU’LL NEED (increments below in the printout):
4 oz gin, divided
24 oz. Powell and Mahoney Sparkling Tonic, divided
2 oranges
4 lemons
4 limes
1 pomegranate
WHAT YOU’LL DO:
Turn the oven on high broil.
Slice the citrus and lay it on a baking sheet lined with parchment paper. Place in the oven for 5-10 minutes, or until all of the citruses are charred.
Deseed the pomegranate, making sure to reserve some of the juice. When the citrus is charred add one slice of each type into a cocktail shaker with about 1 Tablespoon of pomegranate seeds and 2 ounces of gin. Muddle well. Add a few ice cubes to the shaker and shake.
Pour over ice in a glass and top with 6 ounces of tonic and stir. Top with a few slices of citrus and a few pomegranate seeds and serve!

I came across this article last weekend and decided to have a go! Burnt (really burnt) the first lot of pomegranate as forgot to set my oven timer and was too bust chatting, however second time around was a success, thanks for sharing!
