You can find out more in the book about where my Christmas cookie obsession comes from, but for now, I’d let you in on this little recipe secret, and let you have the rest. LET’S GET TO IT!
WHAT YOU’LL NEED (increments below in the printout):
Coconut sugar
Ghee or butter
Egg
Finely ground, blanched almonds or almond flour
Baking powder
Baking soda
Vanilla
Sea salt
Dried cranberries
White chocolate chunks or chips
WHAT YOU’LL DO:
Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
Cream together the coconut sugar and ghee for about 1 minute until fluffy. Add the egg, scrape the sides, and beat until combined. Add the ground almonds or almond flour, baking powder, baking soda, vanilla and sea salt. Mix well until everything is incorporated.
Fold in the cranberries and white chocolate. Scoop out the cookies using a cookie scoop or tablespoon measuring spoon. Place into the oven for 10-12 minutes or until the cookies are just golden brown. Cool the cookies on a wire rack and serve!

Ingredients
- 1/2 cup coconut sugar
- 4 Tablespoons ghee or butter – softened
- 1 egg, room temperature
- 2 + 1/3 cups finely ground, blanched almonds or almond flour
- 1/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla
- 1 pinch sea salt
- 1/3 cup dried cranberries
- 1/3 cup white chocolate chunks or chips
Instructions
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
