You wanna know what my pet peeve is? When something is advertised as a 30-minute meal but it doesn’t account for prep time AND cook time. Isn’t that the worst? You’re 15 minutes into chopping cabbage, sweating while the kids trash the house and you’ve got a 6pm meeting and things just aren’t working.
So my #1 reason for loving this Italian Sausage and Veggie Bowls recipe…It ACTUALLY takes 17 minutes or less to make from start to finish.

- Super fast (I average about 15 minutes start to finish when using pre-cooked sausage)
- Just 6 ingredients if you use storebought tzatziki (and I do most times)
- Veggie packed
- Protein packed
- Complex carb packed (we are not low carb around here)

How do you make Italian Sausage and Veggie Bowls?
All you need to do is saute some veggies (I like peppers and zucchini) in some olive oil. Then, add some sausage. I like to use pre-cooked chicken Italian sausage. This grilling bundle by True Story Foods is fabulous. The ingredients are so simple, dairy free, gluten free and sugar free.
Then once the veggies and sausage are cooked top the rice and add the tzatziki and diced cucumbers. That’s it!

This is a fantastic meal prep recipe. It can be made at once and stored in individual portions in the fridge for 2-3 days.

Quick Italian Sausage and Veggie Bowls with Tzatziki Sauce
These super quick and easy Italian Sausage and Veggie Bowls come together in less than 20 minutes for a healthy and delicious meal idea.

Ingredients
- 1 Tbsp. olive oil
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 package Italian sausage of choice, sliced (I like True Story Foods Italian Chicken Sausage)
- 1 package microwaveable rice of choice OR 2 cups cooked rice/quinoa
- 1 cup tzatziki (see notes for a homemade version)
- 1 cup diced cucumber
- salt and pepper to taste, if desired
Instructions
- Heat the oil in a pan over medium heat. Once hot add the pepper and zucchini and saute for about 5 minutes.
- Then, add the sausage and cook until browned, about 5-8 additional minutes.
- Cook your rice according to package directions.
- To serve, top the rice with sausage and veggies, a good dollop of tzatziki, and about 1/4 cup of the cucumbers.
- To meal prep, assemble everything but don’t add the tzatziki. Add when you’re ready to eat and store in the fridge for 2-3 days.
Notes
- You can customize this and substitute based on the veggies you have in your fridge
- Hummus and/or fresh herbs make a nice addition here, as well
Homemade tzatziki:
- 1 cup plain, Greek yogurt
- 1/3 cup grated zucchini
- 1 lemon, juiced
- 1 tsp. honey
- 1/2 tsp. salt (or to taste)
- 1/4 tsp. garlic powder
- pepper, to taste
