Potatoes are a versatile side dish that my family loves…but I’m picky about how I like my potatoes. They can be boiled, roasted, mashed, or fried, and they can be seasoned with a variety of herbs and spices. In my book the simplest and most delicious way to prepare potatoes is to score them and roast them in butter AND olive oil with sea salt. Scored potatoes are here to stay in my kitchen.
I HAD to get this recipe out for you guys ASAP. I saw someone on TikTok doing something similar with parmesan cheese and potatoes and when I went to recreate it…I was out of parm! So, I decided to score potatoes, slather them with butter and roast them cut side down in a bit of olive oil.
The result – a hybrid baked hash brown potato that’s crazy addictive. You’re going to be obsessed.

What are scored potatoes and why are they a good choice for a side dish?
Potatoes are a great side dish because they can be made in so many different ways like with a juicy venison steak, roasted chicken, or even a pork tenderloin. One of my favorites is scored potatoes.
First, you’ll need to wash your potatoes and then dry them off. Next, using a sharp knife, cut shallow slits across the top of the potato, making sure not to cut all the way through. Then, brush olive oil liberally all over a baking sheet. Finally, slather the cut or scored side of the potatoes with good quality butter and sprinkle with salt.
Place the potatoes on a baking sheet and bake at 400 degrees for about 30-40 minutes, or until golden brown. These potatoes are crispy on the outside and soft on the inside – they’re almost like a baked potato crossed with a hash brown! Plus, they’re so easy to make that they’re perfect for a busy weeknight. So go ahead and give them a try – I think you’ll be hooked!

How do you score potatoes in order to make them crispy and delicious?
One of the keys to making potatoes even more delicious is to score them before cooking. Scoring potatoes helps to create evenly cooked slices that are crispy on the outside and fluffy on the inside. To score potatoes, simply cut shallow slits along the surface of the potato at regular intervals. Be careful not to cut too deep, or the potatoes will fall apart during cooking. For extra crispy potatoes, make sure to cut the potatoes into diamond shapes. This will help them to cook evenly and prevent them from sticking together. With a little effort, you can take your potatoes from ordinary to extraordinary. So go ahead and give it a try!
