Technically, bison isn’t really “wild” game anymore because it’s usually farm raised but it’s still a great source of lean protein. What’s goes in a BLT burger?
Why bacon, lettuce, tomato, a little bit of mayo and ground meat, of course! And then you add bison for a BLT bison burger.
What’s the secret ingredient?
Okay here it is – bourbon. I put a little bit of bourbon in the ground bison meat before I form the patties. Of course, this is optional, but the flavor it brings is NEXT LEVEL.

How do you make sure the BLT bison burger isn’t dry?
Don’t overcook your meat! Make sure you’re not cooking your patties too much past medium, which is 140-145F. The bacon helps make these extra juicy, too. That’s why BLT bison burgers are genius.

Bison BLT Burgers
These BLT bison burgers are packed with juicy bison meat, thick slices of bacon, fresh lettuce and tomato, and a secret ingredient that make these next level.

Ingredients
- 1 lb. ground bison
- 2 tsp. bourbon (optional)
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. garlic powder
- 4 slices bacon
- 4 hamburger buns (I suggest brioche)
- For serving – lettuce, tomato, mayo
Instructions
- Preheat a grill, cast iron pan or a flat top over medium heat.
- Mix together the bison, bourbon, salt, pepper, and garlic powder. Shape the meat into four equal patties.
- Grill the bison for about 4 minutes per side, or until they are cook to medium temperature (140-145F).
- While the burgers cook, cook the bacon in a skillet over medium heat until crispy. Remove and let it drain on a paper towel covered plate.
- To assemble the burgers, spread mayo onto one of the burger bun halves if using. Stack the bison burger, bacon, lettuce, and tomato and top with the second half of the bun.
