WHY BANANA BREAD?
I know, I know! Many of you are still focusing on your new years resolutions and are asking “Allie, why banana bread?” Well, while banana bread may be seen as a sweet treat, there are health benefits that show that it can still be part of a balanced diet, bringing joy and a touch of sweetness to your day. Plus, homemade is always better than store-bought because you know what goes in the baked good!
Bananas are loaded with fiber, helping to keep your digestive system running smoothly and promoting a feeling of fullness. Need an energy boost? Bananas are your go-to, thanks to their natural sugars and carbohydrates, making them perfect for a pre-workout snack or a mid-afternoon pick-me-up. And let’s not forget about the vitamins and minerals – bananas are full of vitamin C, vitamin B6, snd potassium, all of which play key roles in keeping your body functioning at its best. While banana bread may not be as nutritious as eating a plain banana, there are still some health benefits to enjoy when indulging in this delicious treat!
I also love to use Greek yogurt for an extra protein bump, farm fresh eggs AND good quality butter. Healthy fats, protein and energy boosting carbs? Sign up (and my toddler) up!
INGREDIENTS AND KITCHEN TOOLS
This take on a classic banana bread is going to blow you away. Every bite is filled with a pop of blueberries, plus the buttery soft texture if the banana bread that will leave you coming back for more! Here’s what I use:
- Sugar
- Butter, melted and cooled (get the good butter 🙂 )
- Ripe Bananas (mashed)
- Greek yogurt (we use full fat)
- Vanilla Extract
- Eggs
- All purpose flour (plus a little extra for coating blueberries)
- Baking soda
- Salt
- Fresh or frozen blueberries (do not thaw frozen)
NOTE:
- I haven’t tested this recipe with Gluten Free Flour so I am not sure if that would change the consistency of the bread.
- I do not think you’ll be able to adapt this recipe to be vegan. The eggs and yogurt help the bread become fluffy and most. I do not believe you will get the same result with flax eggs.
- You can use frozen or fresh berries for this recipe. You do not want to thaw the frozen blueberries.
- An option step is to coat your blueberries with flour so they do not sink to the bottom of your loaf.
- You can totally replace the blueberries with chocolate chips, other fruit or even nuts if you prefer. Or omit them!
Kitchen Tools:
For this recipe, you’ll need (2) 9×5 in loaf pans (you can also use 4 mini loaf pans). A stand mixer or a hand mixer will work (we often do this by hand because my toddler LOVES to mix), a medium and large mixing bowl, measuring cups and spoons, and a good spatula. For storing, you’ll want a good bread container or zip top bag.
STEP BY STEP | MAKING MOM’S BANANA BLUEBERRY BREAD
Step 1: Preheat the oven to 350F.
Step 2: Grease (2) 9×5 inch loaf pans (or 4 mini loaf pans)
Step 3: Wash your blueberries thoroughly (if fresh). This is totally optional, but I would recommend coating your blueberries in some flour to prevent them from sinking to the bottom of your loaf.
Step 4: In a large bowl beat sugar, butter, bananas, yogurt, eggs and vanilla together well.
Step 5: In a separate bowl, whisk together the flour, baking soda, and salt.
Step 6: Once your flour mixture is ready, fold the dry ingredients into the wet until well combined. Next, fold in the blueberries.
Step 7: Pour the batter evenly between the loaf pans.
Step 8: Bake for 55-60 (40-50 for mini loaves) minutes, until a toothpick or cake tester comes out clean and the top is golden brown.
Step 9: Cool in the pan for at least 10 minutes before removing to slice and serve (this is important!).
HOW TO SERVE

STORING AND REHEATING
Whether you make 2 regular sized loaves or 4 mini loaves, you can store any additional loaves in an airtight container on the counter for 3-5 days or in the fridge for up to a week.
To freeze: Wrap loaf(s) in plastic wrap and place in a zip top bag and freeze for up to 3 months
