Hey, it’s me. I want to bust out in evil Ursula laughter because I feel like a diabolical genius for posting this but its really not me at all. It’s really fresh apples, the perfect spice blend and…really good, buttery crust. Which means you can do it, too.
Why am I calling it lazy girl galette? The galette is basically pie’s super easy cousin so if you’re not wanting to tackle all of that folding and crimping this one is for you! This month’s pie of the month club star is the easier family member that we should alllll be making, again and again, this fall.

Rustic Apple Galette
This Rustic Apple Galette is easier than pie – literally. The perfect apple filling is easily folded into my favorite, buttery pastry crust.
- Prep Time: 1 hour
- Cook Time: 40 minutes
- Total Time: 1 hour 40 minutes
- Yield: 8 1x
Ingredients
- 1 unbaked pie crust – here’s my recipe
- 3 granny smith apples, peeled and thinly sliced
- 1 macintosh apple, thinly sliced
- 1/4 cup granulated sugar
- 1/4 cup coconut sugar
- 2 Tbsp. arrowroot or tapioca starch
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 tsp. allspice
- juice of one lemon
- To finish the crust (optional): 2 Tbsp. heavy cream and 1 Tbsp. coarse sugar
Instructions
- If you’re making a homemade pie crust, start by making that. If you’re using my recipe, you only need to make 1/2 of it.
- Once your pie crust has chilled for at least 20-30 minutes, begin to make the filling.
- Peel and slice your apples.
- Add them to a bowl with the granulated sugar, coconut sugar, arrowroot starch cinnamon, nutmeg, allspice, and lemon juice. Stir well and set the bowl aside.
- Preheat the oven to 4ooF.
- Roll out the pie crust on a piece of parchment paper into about a 13in circle.
- Spoon the apple mixture in the middle of the crust leaving about 1+1/2 inches of room for the crust around the edges.
- Fold the edges up around the filling and slide the galette onto a baking sheet.
- Brush with the cream and sprinkle with the sugar.
- Place in the oven for 30-40 minutes and bake until golden and bubbly.
