My Dairy Free Mocha French Toast Bake takes hearty, whole grain bread and bakes it in a delicious coconut milk mocha custard.
There are a few things I really love in life – coffee, french toast and my dad. And there are a few things he really loves in life – coffee, coffee, espresso, more coffee and red wine. And maybe me. We’re buds. Besties, really.
If you’ve met me in person, or follow me on social media, you probably know allllll about my dad, PMac. He’s just one of those people that is everyone’s favorite guy. He isn’t the loudest person in the room (that would be me, lol), but he always seems to be the quiet center of things. When I was little, he got this like GIGANTIC coffee cup – this thing holds like 6 cups. I think my mom got it for him one year, and in rubber, bubble letters it says “Daddy Needs Coffee”. It still sits in his office.
I find this funny for two reasons. 1) he’s the owner of a large scare construction firm (that he started from the ground up in 2010 by himself) in an incredibly chic office space – and there sits a huge blue and red mug that says “Daddy Needs Coffee”. LOL. 2) I don’t think I’ve ever seen the man NEEDING coffee, even though I bet he drinks 5+ cups a day. Me – I wake up in a fog and kind grumble around until I pour a cup. He wakes up on 2-3 hours of sleep, bright-eyed and bushy-tailed, ready to do whatever he needs to do that day, without complaint. He’s simply an anomaly. And I love that tacky mug.
I could write about my dad for HOURS – the impact he’s had on my business and professional life, how I literally used to walk behind him and try to move just like he did so I could be his mini-me, how he falls asleep to almost every movie but somehow manages to watch Beauty and the Beast with me over and over, his crinkly smile, the number of lives he’s touched. He’s a special person and I’m one proud daughter.
I’m pretty terrible at expressing myself sometimes, so I just cook for people. And in his honor, I’ve made this Dairy Free Mocha Baked French Toast. It’s hearty Alvarado Street Coffee Flour Bread (you could use any whole grain bread here), covered in a coconut milk coffee cream and chock full of chocolate chips. Yes, this counts for breakfast. Promise.

Dairy Free Mocha French Toast Bake
My Dairy Free Mocha French Toast Bake takes hearty, whole grain bread and bakes it in a delicious coconut milk mocha custard.

Ingredients
- 5 eggs
- 1 16oz can full-fat coconut milk
- 1/2 cup maple syrup
- 2–3 Tbsp. instant coffee or espresso powder, depending on your preference
- 1 tsp. vanilla extract
- 1 pinch sea salt
- 8 slices Alvarado Street Bakery Coffee Flour Bread – or whole grain bread of choice, cubed
- chocolate chips
Instructions
- Preheat the oven to 350 degrees.
- Whisk together the eggs, coconut milk, coffee powder, vanilla, and sea salt.
- Cut the bread into cubes and put half of it into a baking dish. Mine is an 8×8.
- Sprinkle half of the chocolate chips on top of the bread cubes.
- Add the remaining bread and chocolate chips to the baking dish.
- Pour the egg and coconut milk custard over the bread, making sure each piece has been touched by the liquid. Cover the dish with foil and place in the oven.
- Bake covered for 30 minutes, remove the foil and bake for an additional 10-15 minutes, or until the center of the bake is set and is not wet.
- Cool, cut into cubes and serve.
Can you make this a day ahead or it it best cooked immediately?
