Have I told you guys before I was an Instant Pot hater? I know, I know we’ve been OVER THIS.
But really. I’ve been converted, I have seen the light, sister. I use it all of the time when I cook venison, like when I make my favorite stew or roast, but I decided I need to do something with chicken!
My roasted chicken thighs have been one of my most popular posts for over a year now! They’re the #1 recipe people tell me they make when I talk to them in person. And for good reason.

Chicken thighs are always so cheap & they’re mega flavorful. I feel like they got a bad wrap in the 90’s when everyone and their mother was afraid of fat, but now, we’re on the straight and narrow again, friends.

I love using the instant pot because you can sear to create a little crust on the chicken and then pressure cook it in broth with spices and seasoning to get fall-apart tender meat.

Juciest Instant Pot Chicken Thighs

Ingredients
- 1 Tbsp. olive oil
- 2lbs. chicken thighs (I used boneless + skinless here)
- 1 cup chicken stock
- 1 tsp. salt
- 1 tsp. Italian seasoning
- 1/2 tsp. pepper
- 1 pinch paprika
Instructions
- Set the Instant Pot to “Saute” for 12 minutes.
- After 2 minutes, add the oil, let it heat for 1 minute, and then add the chicken thighs.
- Sear on both sides, flipping about halfway through.
- Once the cycle finishes, add the remaining ingredients to the Instant Pot.
- Place the lid on the Instant Pot and turn the knob to “Sealing”.
- Select “Pressure Cook” on high pressure and set the cycle for 5 minutes.
- Allow the cycle to run and immediately perform a manual release.
- Enjoy!
Notes
- the chicken can be eaten as is, or it shreds wonderfully for salads, tacos, dips, whatever!
- Reserve the liquid from the pot & add it to soups or sauces once the fat separates from the top!
