I love a good graham cracker pie crust. It’s SO easy to whip up and is perfect for those of you who are intimidated of making or who don’t have time to make traditional pie crust.
I especially like cream and custard-based pies with this recipe. I think the extra crunch from the cookie crumbs make the perfect texture. There’s something about cutting into a piece of pie and hearing the split of the crust and your fork hitting the plate with a clang and a scrape. Absolutely DIVINE.

Do you use crumbs or sheets for pie crust?
You can use either for this recipe (both quantities are provided below) but I prefer to keep sheets on hand because we like to make s’ mores a lot for a fast treat.
I make my crust in the food processor, so I just pulse the sheets for a few seconds to break them down and make my own crumbs. It’s more economical that way, too.
What can you make with this recipe?
You can make pies, tarts, and cheesecake with this crust recipe. I wouldn’t suggest using this with fruit-based pies and tarts because they’ll make it too soggy. But custard, pudding, and cream-based pies are just the ticket.

Ingredients
- 8 graham cracker sheets or about 1 and 1/2 cups graham cracker crumbs
- 6 Tbsp. butter, melted
- 1/4 cup brown or coconut sugar
- 1 pinch salt
Instructions
- Preheat the oven to 350F if you need a pre-baked crust.
- Place the graham cracker sheets (if using) into a food processor or plastic bag. Crush in the food processor or with a rolling pin on mallet in the bag.
- Mix in the butter, coconut/brown sugar and salt.
- Press the crust mixture into the bottom of a pie plate, tart shell, or spring form pan and make a lip around the sides. I find that using a small measuing cup to press down really helps.
- If you need to use a pre-baked crust for a recipe, bake for 12-15 minutes, or until golden brown and fragrant.
